At Fallen Pine we cultivate the Atlantic Oyster, Crassostrea Virginia, native to the Mid-Atlantic waterways and familiar to watermen for generations. The Salt Buoy is a cocktail oyster — small, consistent, and built for the half shell. We grow them just north of the Virginia line where Chincoteague Bay meets the Atlantic coastal system, in some of the cleanest, highest-salinity water in Maryland. That salinity means a briny, clean bite with a finish that doesn't need much help. We raise them in floating cages, off the bottom and in the current, tumbled regularly to chip the shell edge and force a deeper cup. That tumbling isn't cosmetic — it produces a stronger shell, a cleaner look, and the uniform shape that holds up on a raw bar. We grade every bag by hand*. The product deserves it, and so do our customers. The water does the work. We just make sure nothing gets in its way.
