At Fallen Pine we cultivate the Atlantic Oyster, Crassostrea Virginia, native to the Mid-Atlantic waterways and familiar to watermen for generations. The Salt Buoy is a cocktail oyster — small, consistent, and built for the half shell. We grow them just north of the Virginia line where Chincoteague Bay meets the Atlantic coastal system, in some of the cleanest, highest-salinity water in Maryland. That salinity means a briny, clean bite with a finish that doesn't need much help. We raise them in floating cages, off the bottom and in the current, tumbled regularly to chip the shell edge and force a deeper cup. That tumbling isn't cosmetic — it produces a stronger shell, a cleaner look, and the uniform shape that holds up on a raw bar. We grade every bag by hand. The product deserves it, and so do our customers. The water does the work. We just make sure nothing gets in its way.
